Do you have overripe bananas at home? Don’t throw them they can be useful in baking a moist and delicious cake. A banana cake can be served with tea, coffee, juice, milkshake, smoothie, etc. Scroll down to check a banana cake recipe.
Ingredients you need:
- 3-4 overripe bananas
- 1 cup of brown sugar
- 4 eggs
- 1 cup of vegetable oil or melted butter
- 2 cups of self-raising flour
- 1 teaspoon of salt
- 1/2 teaspoon of baking soda
- 1 teaspoon of vanilla extract/ essence
- 1/4 cup of chocolate chips
- a handful of groundnuts (optional)
In place of self-raising flour, you can use all-purpose flour and 1 tablespoon of baking powder
Recipe:
- Mash 3-4 bananas in a bowl using a fork
- Beat 4 eggs in a separate bowl add them to the mashed bananas
- Add 1 cup of vegetable oil/ melted butter and 1 cup of brown sugar
- Mix the ingredients into a smooth batter
- In a separate bowl, sieve 2 cups of self-raising flour
- Add 1 teaspoon of salt and 1/2 a teaspoon of baking soda to the flour bowl. Mix the ingredients well
- Add the dry ingredients to the wet ingredients and mix well.
- The batter should be thick but well mixed.
- Add 1 teaspoon of vanilla extract and mix well
- Add 1/4 cup of chocolate chips and a handful of groundnuts but this is optional.
- Meanwhile preheat the oven to 350F
- Grease your mini loaf tin with butter or vegetable oil and dust it with self-raising/ all-purpose flour
- Pour in your batter let it settle and even
- Cut a banana into thin pieces and place them on top and sprinkle some groundnuts on top
- Put your tin in the oven to bake for 1 hour, halfway through cover the tin with aluminum foil to prevent it from getting burnt before it gets evenly baked
- Use a toothpick or a fork to check if it is fully baked. The fork or toothpick should come out clean.
- Let your cake cool for about 30 minutes before removing it from the tin
- You can now cut your cake and serve it with a glass of juice, milkshake, smoothie/a cup of tea or coffee. Bon appétit
