Fried chicken rice

Ingredients you need:

  • 2 cups of boiled rice
  • 1/2 kg of boneless chicken
  • 2 big carrots
  • French beans
  • 1 onion
  • 3 cloves of garlic
  • 1 small piece of ginger
  • Vegetable oil
  • 2 tablespoons of paprika
  • 1 tablespoon of garam masala
  • 2 tablespoons of black pepper
  • 1 tablespoon of soy sauce
  • 1 royco beef cube
  • Salt

Recipe:

  • Boil 4 cups of water, add 1 tablespoon of vegetable oil and 1 tablespoon of salt. (water ratio should 1:2- 1 cup of rice for 2 cups of water)
  • Wash your rice, drain the water, and put the rice in the boiling water. Cover the cooking pot and let the rice boil under medium heat.
  • Reduce the heat 10 minutes before turning off the heat to allow the rice to dry well.
  • Leave the rice to cool for a minimum of 3 hours before using it. (Alternatively, you can boil the night before and cook it the following day.)
  • Chop the boneless chicken into small pieces, preferably cubed.
  • Steam it and sprinkle 1 tablespoon of black pepper and 1/2 a teaspoon of salt.
  • After steaming the boneless chicken which should take roughly 10 minutes. Add vegetable oil and shallow fry it until it turns golden brown.
  • Add 1 onion (well chopped), 3 cloves of garlic and 1 small ginger (grated)
  • Mix it under medium heat.
  • Dice 2 big carrots (cubed) and cut the french beans into small pieces just enough not too many.
  • Add the carrots and the french beans in the cooking pot and mix.
  • Add 1 tablespoon of garam masala, 1 tablespoon of black pepper, 1/2 teaspoon of salt, and sprinkle 1 royco beef cube. Mix well and let the spice blend in well.
  • Under low heat, add boiled rice sprinkle 2 tablespoons of paprika and add 1 tablespoon of soy sauce. Mix gently preferably with a slender cooking stick to avoid mashing the rice. Make sure there no trace of any white rice.
  • After mixing well, turn off the heat and serve it with your favourite stew, sauce with salad or vegetables. Enjoy your meal.
