This type of loaf cake is full of chocolate goodness, perfect for people with a sweet tooth. It can be served for breakfast, as a snack, or as a dessert.
Ingredients:
- 1 and 3/4 cups of self-raising flour
- 1/4 cup of unsweetened cocoa powder
- 1/4 cup of milk
- 4 eggs
- 1 cup of sugar
- 1 cup of vegetable oil
- 1/4 cup of dark chocolate chips
- 1 tablespoon of coffee
- 1 tablespoon of hot water
- 1 tablespoon of vanilla essence
- 1 teaspoon of salt
- 1/4 cup of grated dark chocolate
Recipe:
- Sieve 1 3/4 cups of self -raising flour and 1/4 cup of cocoa powder in a bowl
- Add one teaspoon of salt to the flour and mix
- In a separate bowl, beat four eggs.
- Add one cup of oil and sugar to the eggs and mix
- In a small bowl, mix 1 tablespoon of coffee and 1 tablespoon of hot water.
- Add the coffee to the oil and eggs mixture
- Add the flour to the egg mixture in bits as you mix
- Add milk to smoothen the batter until it is has attained the right texture, not too thin nor too thick with no lumps.
- Add 1 tablespoon of vanilla essence to the batter and mix
- Add dark chocolate chips to the batter, mix it using a spatula
- Using a brush, grease your loaf tray with vegetable oil or butter
- Dust the loaf with self-raising flour
- Pour in the batter and even it with a spatula
- Preheat your oven for about 5 minutes
- Bake your chocolate loaf cake for 1hr 10minutes at 250F
- Use a fork to confirm it is baked evenly.
- Run a sharp knife around the cake to loosen it.
- Flip the loaf cake on a wire rack or a tray and let it cool for 30-45 minutes. before slicing or decorating it
- Melt 1/4 cup of dark chocolate and pour the hot chocolate on the loaf cake
- You can also dust the cake with icing sugar but this optional.
