Viazi karai is a Swahili dish made from potatoes and an all-purpose flour mixture. It is very easy to prepare compared to fries and does not consume a lot of oil. It can be served with your favourite stew, your favourite sauce alongside with some vegetables or salad.
Ingredients you need:
- Potatoes (this is dependent on the number of people you are serving)
- 2 cups of all-purpose flour
- Salt
- 1 teaspoon of food colour (egg-yellow)
- Water
- Vegetable oil
- Coriander leaves (it is not compulsory)
Recipe:
- Peel potatoes, wash them, add 1 tablespoon of salt in the cooking pot and boil them for 20 minutes and turn them as the boil so that they get cooked evenly.
- Chop the potatoes into the shapes you want, cubed or circle, and set them aside.
- Put 2 cups of all-purpose flour in a bowl, add 1 teaspoon of salt. Mix
- Add water as you mix the batter until it is thick enough to coat the potatoes. The batter should be smooth with no lumps.
- Add 1 teaspoon of food colour (egg-yellow) in the butter mixture and mix.
- Chop the coriander leaves and mix it in the batter.
- Deep the potato pieces in the batter and deep fry them.
- Place them on a kitchen towel to soak the excess oil.
- It is best served while hot. Serve the viazi karai with your favourite stew, favourite sauce and salad or vegetables. Furahia mlo wako.
