Orange loaf cake

Ingredients you need:

  • 3 fresh oranges
  • 1 cup of vegetable oil
  • 1 cup of sugar
  • 3 eggs
  • 2 cups of self-raising flour
  • 1/2 teaspoon of salt
  • 1 tablespoon of vanilla essence

Recipe:

  • Put 1 cup of vegetable oil in a bowl mix it with 3 eggs and 1 cup of sugar
  • Mix it until its smooth and the sugar is well beaten
  • Sieve 2 cups of self-raising flour in a separate bowl and add 1/2 teaspoon of salt. Mix it well with a spatula
  • Grate 1 orange to get orange zest and put it in a small bowl
  • Cut the 3 oranges into halves and squeeze the juice into a small bowl
  • Sieve the juice to remove any particles and set it aside
  • Add the flour to the vegetable oil mixture in bits as you mix with a hand mixer or an electric mixer
  • Pour the orange juice in bits and mix it well into the batter
  • Add more flour to the batter as you mix
  • Pour in more orange juice until you have everything mixed
  • Add 1 tablespoon of vanilla essence to the batter and mix
  • Finally, add the orange zest to the batter
  • Grease your loaf tray with vegetable oil using a brush
  • Sprinkle self-raising flour in the loaf tray evenly, shake the loaf tray for the flour to evenly spread out
  • Pour the batter in the loaf tray, even the batter with the help of a spatula
  • Preheat the oven for about 5-10 minutes
  • Bake the orange loaf cake for 45minutes at 375F
  • Use a fork to check if it’s well-baked inside, in case the fork doesn’t come out clean
  • Let it bake for another 10 minutes at 375F before removing the loaf cake from the oven
  • After removing the cake from the oven, run a spatula or a knife around the edges of the cake to loosen it from the sides.
  • Flip the pan over on a chopping board, while holding the loaf tin at a 45-degree angle to pop the cake.
  • Let it cool for about 30 minutes on a rack before slicing the cake
  • Serve the cake with a glass of juice, a favorite cup of tea, or coffee. Bon appétit!
