Blueberry Muffin

Ingredients you need:

  • 3 cups of self-raising flour
  • 3 eggs
  • 1 cup of milk
  • 1 cup of sugar
  • 1/2 teaspoon of salt
  • 1 cup of vegetable oil or melted butter
  • 1 tablespoon of vanilla essence
  • A handful of fresh blueberries

(ingredients for 12 blueberry muffins)

Recipe:

  • Sieve 3 cups of self-raising flour in a bowl, mix it with 1/2 teaspoon of salt, and set it aside
  • Beat 3 eggs in a bowl and whisk
  • Add 1 cup of oil and 1 cup of sugar to the eggs. Mix the ingredients using an electric mixer or hand mixer until it is smooth
  • Add self-raising flour to the wet ingredients in bits as you mix it well, add milk to smoothen the batter before adding more self-raising flour. Do this until you have put all the flour. The batter should be smooth, neither too thin nor too thick
  • Add 1 tablespoon of vanilla essence to the batter, mix it well and finally add a handful of blueberries after washing them.
  • Put the muffin baking papers on the muffin baking tray
  • Preheat the oven at 300F for 10 minutes
  • Using an ice cream scoop, put 1 & 1/2 scoops of batter per muffin paper do this for all the muffin papers
  • Put the batter in the oven to bake for 25 minutes
  • Use a toothpick to confirm the muffins are well baked. The toothpick should come out clean
  • Let the blueberry muffins cool for 15-20 minutes before serving
  • Serve your blueberry muffins with a cup of tea/coffee/ or a glass of juice. Bon appĂ©tit!
