Passion fruit cupcakes

Passion fruits in cupcakes are just heaven. Cupcakes are one of the best ways to express love to your friends and family. These cupcakes are prepared using passion curd that makes them even more delicious. Scroll down to check the recipe and ingredients you need.

Ingredients:

  • Passion curd (check the recipe in the passion curd recipe below)
  • 10 passion fruits
  • 6 eggs
  • 2 scoops of margarine or butter
  • 1 cup of vegetable oil
  • 3/4 cup of milk
  • 1 1/4 cups of brown sugar
  • 1 3/4 cups of self-raising flour
  • 1/2 teaspoon of salt
  • 2 tablespoon of vanilla essence
  • Whipping cream (Check recipe in the whipping cream recipe below)
  • 1 cup of whipping cream (milk)
  • 2 tablespoons of icing sugar

Recipe (passion curd):

  • Squeeze 10 passion fruits in a bowl or a cup and set the passion fruit juice aside.
  • In a separate bowl, add 1/4 cup of sugar and 2 scoops of butter or margarine.
  • Using an electric mixer, mix the butter and sugar until the butter is soft and the sugar is crushed.
  • Beat 3 eggs and add them to the butter mixture. Mix everything until it is well incorporated.
  • Add 3/4 of the passion fruit juice to the mixture and mix.
  • The remaining passion fruit juice will be used while preparing whipping cream.
  • Put 2 cups of water in a cooking pot heat under medium heat.
  • Place the bowl with the butter mixture in the boiling pot.
  • Stir as you mix everything for about 5- 10 minutes.
  • Let the passion curd cool in a bowl or a jug.
  • Then put it in the fridge for a minimum of 6 hours. The passion curd should be prepared the day before using it.
  • Scoop the curd on top and put it in a separate bowl. To separate it from the liquid part. Leave the rest in the fridge to thicken and use it later.
  • Use the curd you have scooped to prepare the passion cupcakes.
  • The passion curd should be put in the middle of each cupcake.

Recipe (passion fruit cupcakes):

  • Beat 3 eggs in a bowl add 1 cup of sugar and vegetable oil. Mix it until it is fluffy.
  • Sieve 1 3/4 cups of self-raising flour in a separate bowl add 1/2 teaspoon of salt to the flour and mix.
  • Add the self-raising flour to the egg mixture in portions as you mix.
  • Add milk to the batter to smoothen.
  • Mix until you attain a good texture that is not too thin nor too thick.
  • Add 1 tablespoon of vanilla essence and mix the batter.
  • Place cupcake papers on each cup in the cupcake tray.
  • Using an ice cream scoop, put one 1 scoop per cupcake paper
  • Preheat the oven for about 5 minutes.
  • Bake the cupcakes for 25 minutes at 300F
  • Let the cupcakes cool for about 30-40 minutes.
  • Using the base of a nozzle make holes in each cupcake and remove the piece in the middle.
  • Put 1 teaspoon of passion curd in each cupcake.
  • Decorate the cupcakes with whipping cream and passion fruit seeds on top.
  • Put them in the fridge for about 20 minutes then serve them. You can serve these delicious cupcakes with a glass of juice/ soda/ milkshake. Bon appétit!

Recipe (whipping cream):

  • Put 1 cup of whipping milk in a bowl, sieve 2 tablespoons of icing sugar in the same bowl, add 1 tablespoon of vanilla essence, and the remaining passion fruit juice squeezed while preparing passion curd.
  • Using an electric mixer, mix everything until it is smooth and fluffy. The texture should be thick and not runny.
  • Put a nozzle in the icing bag.
  • Place the icing bag in a glass or between your thumb and index finger for support.
  • Add the whipping cream to the icing bag.
  • Secure the end of the icing bag using a rubber band or twist the end.
  • Place it on a plate and put it in the fridge for 20 minutes before using.
  • While whipping, put the icing bag between your thumb and index finger for support.
  • Start whipping from the middle of the cupcake.
  • Put some pressure to squeeze the icing bag for 2 seconds to create a base then move anti-clockwise to make a perfect flower on each cupcake then release the pressure after whipping around the cupcake.
  • Decorate the cupcakes with passion fruit seeds place them on a chopping board and refrigerate them for 20 minutes before serving the passion cupcakes.
