Choco chip & raisins Tea scones

Tea scones are not usually as sweet as cakes but they are perfect for breakfast or 4 o’clock tea. They are crunchy on the outside and soft inside. Chocolate chip and raisins are used to enhance the flavour of the tea scones. Scroll down to check out ingredients and recipe.

Ingredients:

  • 1/4 cup of dark chocolate chips
  • 1/4 cup of raisins
  • 2 and 1/2 cups of self-raising flour
  • 3 tablespoons of margarine or butter
  • 2 eggs
  • 1/2 cup of milk
  • 1 tablespoon of vanilla essence
  • 1/2 teaspoon of baking soda
  • 2 tablespoons of sugar
  • 1 tablespoon of cinnamon
  • 1 teaspoon of salt

Recipe:

  • Sieve 2 and 1/2 cups of self-raising flour, 1/2 teaspoon of baking soda, and 1 teaspoon of salt in a bowl
  • Add 3 tablespoons of margarine or butter to the flour.
  • Mix and rub the margarine/butter with the flour until it looks like breadcrumbs and set aside.
  • Beat 2 eggs, separate 1 yoke from the white egg which will be used later.
  • Add 1 teaspoon of vanilla essence and 1 tablespoon of sugar to the eggs and mix
  • Make a hole in the flour add the egg mixture and 1/2 cup of milk.
  • Mix until it forms a smooth dough not too sticky nor too hard.
  • Add 1/4 cup of chocolate chips and raisins to the dough and mix.
  • Dust your working area with self-raising flour.
  • Place the dough and even it using the palm of your hand.
  • Using a sharp knife cut the dough into equal sizes and the shape you would like.
  • Prepare your baking tray, dust it with self-raising flour, or grease it with vegetable oil and place parchment paper.
  • Place each dough gently leaving equal spaces between each piece
  • Add 1 tablespoon of milk to the white egg and mix.
  • Brush the whitewash generously on each piece.
  • Mix 1 tablespoon of cinnamon powder and 1 tablespoon of sugar in a bowl.
  • Sprinkle the cinnamon-sugar mixture on each piece.
  • Preheat your oven for 5 minutes.
  • Bake your tea scones at 225F for 25 minutes.
  • Let them cool for 15 minutes before serving them with your favorite cup of tea/ coffee. Enjoy!
