Strawberry cupcakes

Did you know you can bake a cake or cupcakes with fresh strawberries? A meal without a cupcake is like a day without sunshine😂. Scroll down and check out how you can make cupcakes even more delicious with strawberries

Ingredients you need:

  • 1/2 cup of strawberries cut into small pieces
  • 2 cups of self-raising flour
  • 1/2 teaspoon of salt
  • 1 cup of vegetable oil
  • 1 cup of sugar
  • 3 eggs
  • 1/2 cup of milk
  • 1 tablespoon of vanilla essence
  • 1/8 teaspoon of tomato red food colour powdered or liquid

Recipe:

  • Cut 1/2 cup of strawberries into small pieces and set them aside
  • Put 1 cup of vegetable oil, 1 cup of sugar, and 3 beaten eggs in a bowl and mix
  • In a separate bowl, sieve 2 cups of self-raising flour and mix it with 1/2 teaspoon of salt
  • Pour in the flour to the wet ingredients in small portions and mix the first portion
  • Add milk to soften the batter
  • Add more flour mix it then adds more milk to soften the batter until you have the flour and wet ingredients completely mixed
  • You add milk until you attain a good texture not too runny nor too thick
  • Add the strawberries you hard cut, mix them with the batter
  • Add 1 tablespoon of vanilla essence and 1/8 teaspoon of tomato red food colour to attain a pink colour.
  • Prepare your cupcake baking tin
  • Put the cupcake base papers
  • Using an ice cream scoop, put 1 scoop per cupcake base paper
  • Preheat your oven at 325F for 5 minutes before putting the batter in the oven
  • Bake your cupcakes for 25 minutes
  • Let the cupcakes cool for about 15 minutes before serving
  • Serve your cupcakes with a glass of juice, your favorite cup of tea, or a bowl of ice cream. Bon appétit!
